Yes, on the login screen there should be an option to choose your desktop environment, I believe it is possibly at the bottom of the screen. Set it to Gnome (or it may be listed as Classic).
How long you'll have this option for though I don't know, sadly it seems that Ubuntu are fixated on Unity, so maybe you might want to look at Xubuntu or maybe another distro such as Linux Mint or Debian.
