AMD:
cat /proc/cpuinfo | grep svm

Intel:
cat /proc/cpuinfo | grep vt

In general, new P4s and above and Athlon 64s and above will have virtualisation.

Watch out for the core 2 Duo processors - some of the don't!

XEN (and KVM) should work OK on CPUs without virtualisation, but there will be more of a speed penalty.
