That's exactly what I used to do - MD player --> line in on PC --> audacity --> .mp3 (recordings of lectures so not worried about 'lossy' compression - saves on space!)

Do they come with USB interfaces, or some other digital connection?
Mine doesn't have USB (Sharp MD-MT20) but I remember one guy at Uni having a Sony one that did! - mine has an 'optical output'/line in and I have connected it to my sony hifi via a lead - I think most MD player/recorders have one of these optical input/outputs.
The portable recorders generally have optical input on the same connection as the Line In, I haven't seen a portable recorder or player with optical outputs though (not sure if the very first recorder had digital inputs/outputs), certainly my portable player from 1995 doesn't have digital output, and none of my portable recorders or players since have either.

My friend is a bit clueless too, although I'm going to try to catch up with her in a week or so's time to have a look at the hardware she has, but it would be good to have a bit of a clue before I see her!

Basically we want to get the recordings onto a medium which will make it future proof - as long as we re-copy to the future every 3 years or so...
Use Audacity to copy/convert to {audio format of choice}- it worked for me
It is a bit long winded though doing it in real time :-)

But then I guess unless you have a HiMD recorder then that's your only choice.
