You've just twitched a memory in the back of my head. Bearing in mind I was never a Mac specialist, isn't there a key combination to clear the NVRAM on boot? Something like holding down the Mac key until you see the happy Mac symbol on screen then let go? Booting with the Ubuntu disk may have performed the same function.

Hold down Command Option and P R I think.

I think the Command key is also known as the Apple key.
