Get away with owning students/lecturers rights? It's a standard contract
that you sign. You'll find it in most work contracts.

Do it without breaking the GPL? As long as they don't distribute the
modified binaries (or supply the source code with the binaries they 
distribute), there's no breaking done. Of course noone else benefits
from any modifications they make.
