I don't think the Cat5 is shielded - it's plain UTP according to the
wrapper.

I'm taking the Cat5 from upstairs to downstairs and the cables would be
together for about 7-8 foot in total. The telephone cable will also be
supporting ADSL in the office. The Cat5 itself would only be in use when I
wanted to use internet access from downstairs.

Come and have a look at our factory, cat 5, telephone, 3 phase mains all 
following the same routing around the building, all over the place! and The 
network works fine.

No it shouldn't cause any problems  especialy over that distance. Twisted pair 
with differential transseivers is quite noise resilliant which is the whole 
point of the technology. It is (can be) better if you have a screen (STP) as 
this can help sheild from more electrostatic events but if implemented 
incorrectly can cause grounding loops that cause even bigger problems.
