My fetchmail conf is more or less the same as yours.
I have no problem with my local domain which is parkside.uklinux.net.  Mail is 
then handled by a Postfix virtual domain for parkside.uklinux.net, which 
takes care of all internet to local mapping, my local net being an 
unregistered private net. Here is part of a typical mail header, without the 
actual local host/domain names  :-

Received: from localhost (localhost [127.0.0.1])
        by 'my mailserver' (Postfix) with ESMTP id B8FF3CBF4
        for <simon@'my machine'>; Tue, 18 Nov 2003 20:29:57 +0000 (GMT)
Received: from mail.uklinux.net ('my gateway' [192.168.**.**])
        by 'my mailserver' (Postfix) with ESMTP id 23B67CBF3
        for <simon@xxxxxxxxxxxxxxxxxxxx>; Tue, 18 Nov 2003 20:29:54 +0000
