It'll work, but it's slower than running nativly. If you go to
www.rom-o-matic.com you will find that you can custom build the
etherboot code in several ways, including a DOS executable which
can be run through the DOS bootmenu feature.

Also it's important to ensure that the server has sufficent
RAM...
