In Evolution try going to View > Character Encoding and select ISO-8859-, then change the font. It worked for me with MK 9.1 when I upgraded to Evolution 1.4.4. With SuSE 8.2 I found that I was sending out the £ symbol with an <A> in front of it although it didn't show on my own screen until I read the "Sent" copy.
