The mail still would be in plain text (unless PGP encrypted, obviously).  It 
would be no different than how it is now with 'key: value' headers in a 
mailbox, just using XML instead of the aforementioned, and a few extra bits 
added in for real tracability.

the mail would also come out of a pop3 or imap server in exactly the same way 
that it does now, no difference at all.
