Having worked on the credit card processing facilities of one
large high street store, I would not assume that merely because
the computers used are more remote from your experience they are
necessarily better secured, or better managed. 

This particular high street store did not meet the standards
required of Internet retailers by credit card companies, and
their corporate networks were large, diverse, and linked into a
wide variety of other networks.

Using large quantities of cash resolves the issue of credit card
abuse, although I might suggest this carries different and more
immediate risks of physical harm than Internet fraudsters are
likely to perpetrate against you.
